i really like the idea of removing the bone from the wing after they are cooked. great lookin plate chef.
i loved when u made this on top chef. funny enough my favorite part was ure super attention to detail in that the chicken wing was boneless. thanks for sharing how u did that! ++MIRA++

Another excellent picture and I would like to add..that I love it when chefs use non-traditional plates such as the one you used.

Would like to see more people using stones..wood, ect for ther food presentations.

That's a neat technique how you're able to remove the bone from the wings.  I've gotta say, Michael, I think if you were sent to a desert island, I think you'd take with you an ISI siphon & liquid nitro!  Great reinventions!

I personally watch the Puppy Bowl smiley-laughing.gif But I do like to make things with melted things on them like Nachos and Pizza, veggie "meaty" versions that are fun!
Bryan V - I thoroughly enjoyed your take on this dish as part of the Table 21 tasting menu at Volt.  A few of us recognized the dish from the show when we dined there in November.
