Has anyone ever cooked with bitter melon? Do you have a recipe you can share? I've come to appreciate it over the years, and ever since my pregnancy I've actually really enjoyed it. My mom makes it with pineapple. The sweetness in the pineapple definitely helps with the bitter taste of the melon :)
you can toss it in an omelet, or stir fry it with hoisin sauce and chicken strips. it's very healthy and it brings the blood sugar down, as well as bringing the hemoglobin up. my mom is off from her blood sugar pills now because of daily bittermellon intake, coupled with exercise. i do caution it for people who takes blood thinners.
