Hi - Great forum.
Can anyone help me. I'd like to create an Egg Nog air. I'm using a recipe of:
2 parts Brandy, 1 part Southern Comfort, 1.75 parts double cream, 3 parts milk, 1.5 parts syrup and 1 egg.
for 170ml of liquid I added 2.5g Lecithin.
However the liquid doesn't seem to foam up as I thought it would. I have 2 questions:
1) Am i missing something to make this work better when I whisk it
2) would it be better to use a whipper? - in which case how would I make the liquid whippable so that it foams from the whipper?
