Food Dehydrator

So we were doing some spring cleaning at my restaurant and found a food dehydrator in the back storage. So i was wondering if any of you out there use a food dehydrator to do some cool things besides dehydrated fruit or powders? I appreciate any ideas

Crisps or chips. its a bit intensive but is all the rage in the raw world.. also a great way to make a chip that isn't fried. By all means make it flavorful. soak the kale or what ever veg you like in a "brine" or season and dehydrate. you can also use a vita mix to make a "paste" out of what ever combo you like, add some seeds or nuts coarsely chopped. Then run a muck!

I use mine to make my own "papers" and puffed starches ie tappioca and also evporated vegtable sauces they become thick and vicious just like reduction but it still tastes of the raw juice since the heat it was subjected to is so minimal.

i always take lightly food in the evening. that's why i never dehydrate.
