Hi Mark... I was looking at your website.  I'll have to stop by to check out your shop on one of my days off.  I live in South Jersey.  I actually have taught cooking classes for kids at my local college for two summers... definitly is fun and interesting with little ones!  When I had my catering business I woud hold dinner demos as a fun alternative for my clients.

well, it all depends on the ages you are covering... the most fun I had was with kids around 12 to 14... they wanted to learn and were willing to try foods.  The 10 year range isn't bad, they are able to use tools and do simple cooking... mixing, boiling, using a griddle (Emeril has this cool kicked up PBJ recipe) but the little kids around 6 or 7 are harder. Parents want to sign them up then get over protective and are afraid to let the kids use tools.  The you find out the kids won't use them because parents never let them at home.  I had no equipment supplied so I used my portable burners and flat griddle.  I made things like mac and cheese, pasta, sloppy joes... though you'd be surprised how many kids didn't know what they are!  lol

and of course not cooking snacks and desserts... apples with a cream cheese dip and such...  cutting cheese into shapes and letting them make stacks with pepperoni and crackers...  there are a lot of kids cookbooks to get ideas out of... little pizzas if you have a toaster oven...

I have a class for kids 12 to 15 that is comming up in April, I'm doing pita pizzas, Mac and cheese, Tossed salad with mandarin oranges and raspberry vinaigrette, fruit smoothies. I think with the real little ones I will just do Birthday parties and celebrations and keep it simple like the pizzas, dips, cup cakes, cookies, and brownies and have them decorate them they could make fresh lemonade etc.
That sounds great....   I have often thought that I'd like to become a culinary instructor one day...  right now I do have a cook that doesn't have a lot of experience but wants to know more and is always asking me how to do things.  I think its important as a chef to help others learn and grow.  We always have more to learn ourselves...  did you happen to read the article I posted recently that I was in?
