Dear Sirs
I have problem with reverse spherical olive recipe used Xantana and Algin from Ferran Adria Molecular Kit.
Used same way as stated in video ....0.7g of Xantana in Olive Juice....made Algin bath 1500g water + 7.5g of Algin mixed than stored in fridge for 24h......
Used spherical spoon, but as soon as I drop solution of olive juice in algin bath, solution comletely crushed without any sign of visible spherication.
Where I made mistake????????
