Thanksgiving Dinner

I was watching The Voltaggio's Take on Thanksgiving and I am looking forward to making my take on many of the dishes.  I have a question about one of hte dishes.  There is heart and gizzard in the gravy and I was wondering if they are cooked at all before they are put in?

the thanksgiving show is one of the best shows i have seen on holiday cooking. i will take a couple of things to my thanksgiving table: gravy and mayo spread on the turkey itself.

i think that using biscuits sounds good but don't they turn really grainy when added to the other ingredients?

as far as the heart and gizzards: i would roast them for a more robust flavor though it is not clear on the tv program if the Volts do this.

Wish I know what the toffee caramel sauce recipe.  Anyone?
