I must say, I had a blast on The Bonnie Hunt Show yesterday. Mike and I made two types of hot chocolate; one bitter, dark chocolate, and one using sweet white chocolate.

Guess who was representing each of the chocolates? Of course, Mike was the bitter one. The idea was that we were to serve them side by side to get the perfect hot chocolate, symbolizing our partnering together in future ventures.

Bonnie seemed to enjoy the combined finished hot chocolate. The episode airs today, Wednesday, December 16. The recipe for my White Hot Chocolate is listed below.

  Bryan Voltaggio's White Hot Chocolate with Orange & Fennel Marshmallows

SERVES
4

For the Hot Chocolate:

INGREDIENTS
560 grams    2% milk
200 grams    white chocolate
1 ½ tsp         grated orange zest
½ ea             cinnamon stick
½ ea             star anise
½ tsp            fennel pollen
½ ea             scraped vanilla bean

STEPS
Heat the milk to a simmer.
Add the aromatics, basically everything except the chocolate.
Let the flavors meld for about 20 minutes.
Add the chocolate by incorporating with a wooden spoon.
Mix in the chocolate until totally combined.
Strain the hot chocolate using a fine mesh strainer.
Reserve hot until ready to serve.

For the Orange & Fennel Marshmallows:

INGREDIENTS
250 grams        sugar
100 grams        egg whites
125 grams        water
5 each              gelatin sheets
¼ cup               10x sugar
¼ cup              cornstarch
1 tsp                grated orange zest
½ tsp               fennel pollen

STEPS
Bring 125 grams of water and all of the sugar to a simmer.
Cook the sugar until it reaches 129C on a candy thermometer.
Meanwhile in the mixer start to whip the egg whites to soft peak.
Bloom the gelatin in ice water.
Warm the gelatin after bloomed in a microwave until melted and warm.
Add the gelatin to the finished sugar.
Then add the sugar to the egg whites.
Flavor as desired at this point.
Once the marshmallow starts to cool enough to handle and soft peaks form, remove from the mixer.
Using a pastry bagpipe the marshmallows into desired shapes.
Dust with the cornstarch and powdered sugar mixture.

I was just able to watch this and I couldn't stop laughing and smiling! I love the sibling thing that comes out when you both are together! I also loved that you both had more time to talk and that we got to see more of your personalities come out! I feel like we got to know you both that much better. Totally reminds me of me and my brothers! I can't wait to try the receipe with my sister in law - we had Top Chef parties each week! Thanks for sharing it!
How many egg whites are in 100 grams?

I've made marshmallows before!!  Only they were plain and were for my son's school project....I never thought of flavored Marshmallows, very cool. Can't wait to try this.

You guys were awesome on BH, I was quite jealous of her getting to cook with you guys :) I love her though, she's great.

My friends and I do something similar with martinis. We order two at the same time, one dirty and one cosmo. Than we drink one than the other. It's the salty sweet combo that makes it great! Happy Holidays, Everyone!

I'm crushed.  I had so hoped the chocolate would be white-hot.  So much for molecular gastronomy!
