Organic Carrots

In the sous vide video we posted, I cooked organic carrots sous vide in a microwave. They came out perfectly and made for a great side dish.  I wanted to tell you a bit about the carrots as I'm a huge fan of them and the farmers that grow them.

The carrots are grown by my good friend Farmer Lee Jones, and his family.  Farmer Jones owns The Chef's Garden which is a local farm in Huron, OH.  The Chef's Garden has been growing vegetables for 40 years and are some of the best carrot farmers I know.  They grow many different colors and sizes of carrot, which is one of the reason I love ordering from them.  I can call them and ask for 100 purple, 100 yellow, and 100 orange carrots half small and half large and they ship them to me in a couple days.  These are just one of the amazing purveyors we use that really helps elevate the food. 

Being a good chef takes years of training, but if you do all the work and don't cook with fantastic ingredients you may as well just hang up your apron.

So, does this mean you'll be coming to CVI this summer?
I love having carrot muffins. They have the same sweet density as corn muffins, but without the aftertaste that I dislike.

I love carrot and coriander soup. I enjoy the slightly sweet taste of the carrot and the spice to add a whole different depth. I actually like adding a little heavy cream to thicken it up just a tad to give it a heavier mouth feel. I’m making it this weekend because it’s so cold outside “50’s in Florida burr” I sit at the table with my wife and 2 kid’s joking and eating warm soup around the table.

We use alot of product from Chefs Garden where I work! Their fresh produce is awesome!
Sliced on the bias, and sauteed in a brown bugar, butter ,candied ginger and orange peel caramel...
OMG-That would be SUGAR...
I have never seen carrots like that before and they are my fave veggie!  I used to eat them by the bagful as a kid, those are gorgeous!
